Overall, I'd say that her knowledge on the subjects is dependent on 2 things.
-Curiosity
-Access to stuff

Her access to stuff is an unknown.  As a scavenger, she may have had success and had great access, or may not have had any success and had no access.

Curiosity is an incredibly important aspect of intelligence.  Something that I've observed in my life is that without curiosity, intelligent people can struggle to do simple things.  With curiosity, dumb people can manage smart things.

When my brother was about 3 years old, we had to start putting locks on everything.
Some of the locks, my brother was one of the only people who were actually able to unlock them.  Few other people really cared how it worked, so they didn't bother trying.  And yet, my 3 year old brother was able to do it, no problem.  That's a simple thing, but it holds true for more complex things too.

Rey was a scavenger.  Not like she was working 24/7 making pyramids or some junk.
A scavenger who likely has access to space age scraps of varying qualities.
If she's a very curious individual, and her access to such scraps is optimistic, it's not impossible.  It's very plausible, even.

It's not legos when my friend works on cars or planes.  He's always been someone to pick stuff apart and try to figure out how stuff works.  A lot of it, he's had the benefit of classes, and stuff, but quite a bit of it, he's learned on his own.

Keylo Ren and Rey duel was awful. They should have saved the dueling from the prequels (only good aspects of them) and brought it to these. But obviously Rey isn't trained so they should have had a different hero who was show up. Preferably unexpectedly.  A student that completed Luke's training that he trusted or a jedi that the Empire didn't assassinate who Luke found and finished his training under. Let keylo kill him off at the end. There had to have been students of Luke before Ben. 9month gestation period and years before a child can comprehend what's being taught. Obviously prep work in the early years but not training. Or hell, have Luke show up and have their understanding of what they were looking for change. They knew they were looking for a map and thought it led to Luke but really it Luke had the other part of the map and was hiding what he found
What about the poison gas? It was a problem with the falcon which she knew how to fix. No big deal.

I loved the duel. Surely someone else randomly being there would be terrible and wouldn't fit in? Rey was the lead in this film and her being fighting Kylo Ren at the end made perfect sense. Her being able to stand up to him makes perfect sense too; we saw her earlier on beating off two guys, who ambushed her, with her staff, so she is clearly skilled with that weapon and a lightsaber is pretty similar. Also, Ren had never completed his training and was injured which made it easier for her.

Ren had training with light and dark. Stopped a blaster mid air and still was able to feel something off with Finn. He would have made short work of those two even being injured which was stupid as hell to begin with. Chewie was farther than the pilot. Oh Ren was emotional? Okay, then instead of stopping the blast with the force how about deflecting it with the saber in your hand
Completeddifferencebbetween needing to be defensive to fend off brawls to live and an art of fighting with a weapon against another very skilled combatant.

Seriously,  nobody in Star Wars was "fully trained" except maybe Yoda and Darth Sidious. That doesn't mean he's less powerful and puts him at equal footing as inferior opponents. It just means his potential growth and power is that much more impressive. Even not being fully trained he shows he is more powerful than we've ever seen vader

He's shown that he's more powerful with some aspects of the force. Like you mentioned, he can stop blaster fire mid air ... but what else is he really good at? I can't think of anything really. For all we know he could be very good at a few things but bad at others. After all, he is still young.

It could be that he's not had much practice fighting with a light saber, hence he got beaten by Rey who's had plenty of practice with a similar weapon. He seems fairly naive and emotionally unstable - maybe he thinks he's extremely powerful because he can stop blaster shots mid air and can knock people around with the force and maybe that's got to his head. Maybe he got too cocky...

Imo we don't know enough to question any of this.

I think the reason for Kylo's emotional instability is that he's trying to live up to Darth Vader's legacy. Those a big shoes to fill and he probably feels that he's not as good as Darth Vader.

I really hope you're not serious. He's had training with both sides. He has a specialized/personalized weapon. Saying that someone trained isn't proficient in weapon of choice in the first thing trained is just butchering the idea of star wars. One thing that is safe to assume in Star Wars world is people wielding light sabers made for them are proficient in it.

30 is still young... News to me

I also forgot to answer your question. What else have we seen that we haven't with vader that shows he's more powerful? (because for... Reasons we should ignore the whole opening scene) How about getting shot by the bow caster? Vader was able to deflect a shot from Han that was directly in front of him.

Vader can force choke, an incredibly impressive feat since he doesn't have hands.

Supposedly he has to use force powers just to stay alive, even in his suit.

Where do they ever say that in Episode 4, 5 or 6.

No clue. That's just what I heard from my brother who pays better attention to the lore and stuff.

I saw Ren smashing his wound and had no clue what it meant lol.
