Yeah it's solved now, pretty sure.

After creating a post, the server calls the function "trackstats" to log it. This function is stored in a different file, so that file needs to be loaded first. For some reason (seemingly randomly) it wouldn't load the required file in advance. Thus it'd make the post and only encounter an error afterwards. I've been seeing these errors in the error log for months, but I thought they were only possible with machine posts.

Still not sure what the root problem was, but I just forced it to load the file immediately before calling "trackstats."
