Mostly Yarnham Hunter armor with a dash of Graveguard armor. I switched to church armor for paarl due to bolt resistance.
As for weapons: I use cannon and repeating pistol +ludwig's holy blade

Yep I did, didn't even know you could progress without killing him.

I'm using a hybrid of armours as well. Yarnham hunter hat, executioner's garb and graveyard gloves and boots

Oh my god, I killed Ebrietas, finally!!! That thing was infuriating!!

Anyway I'm wearing the Crows Set and mainly use the Blade of Mercy plus the Threaded Cane sometimes, gun is still the Blunderbuss, though I'll probably switch that up in NG+
