Some of it sounds less like a rendering challenge and more about optimizing stuff.

Yeah it's all about making a workflow. For example in Horizon they modeled low lod plants first and then designed the higher res models off that.

PS5 speeds up the workflow for the memory side of things a huge amount, but I'm not sure how that affects photorealism and lighting.

I don't know enough about it.  Just sounded interesting.  
The guy was supposedly a former technical art lead at Naughty Dog.

On another note, to me it feels like Sony's focus with PS5 was:
1.) Make it BC.
2.) Ensure there's no overheating
3.) Make it powerful.

Pretty much in that order.
